Salmon baked in paper!



Dh had to work late for St. Patrick's Day. I thought I would make him a nice dinner.

You can use fresh salmon filets or economize and clean a can of salmon.

I placed the salmon on a piece of parchment paper and assembled a packet to wrap.

Here are the packets ready to go into the pre-heated 400 degree oven. They will bake for approximately 20 minutes.






While the oven is pre-heating, boil a pot of water and cut the ends off of the green beans. When the water is boiling, place the fresh green beans in the water for approximately 10 minutes. Tip: don't place the green beans into the boiling water until 10 minutes into the baking of the salmon.







Strain the beans and plate them.






Now it is time to unwrap the parchment packets.






It's all ready to rest on the bed of green beans. Make sure to pour the juices on the plate too.





Viola!!






Pair with your favorite wine! Usually fish is paired with a white but, we prefer red.







I also made a dessert for St. Patrick's Day.

I froze some mint shake in ramekins like I did with the strawberry cake earlier in the week. I then released it and set it on some mini yellow cake. Of course a strawberry on top.

MMM!!! Looks very yummy!! We didn't do anything special this year since my two year old and I were both sick :(
